Grandpa's Roasted Chicken

I must admit this. I have a cookbook addiction - LOL I am on my quest to go digital so I am going through some old cookbooks and trying some of these recipes that I wanted to get around to .... one day! LOL I guess the day has finally arrived.

This cookbook, The Chicken Cookbook, 34th Annual Chicken Cooking Contest Winning Recipes of 1982, has some great recipes - hey, these were the winners!
Grandpa's Roasted Chicken1 whole broiler-fryer chicken2 cups cooked rice1 cup diced celery1/2 cup diced onion2 tablespoons melted margarine (I used butter)1 teaspoon salt1/2 teaspoon pepper1/2 teaspoon thyme1/4 teaspoon nutmeg1/3 cup bottled bottled barbecue sauce

The first thing you want to do is rinse out the chicken and prep your stuffing. Preheat your oven to 375°F.
