Grandpa's Roasted Chicken

I must admit this. I have a cookbook addiction - LOL I am on my quest to go digital so I am going through some old cookbooks and trying some of these recipes that I wanted to get around to .... one day! LOL I guess the day has finally arrived.

This cookbook, The Chicken Cookbook, 34th Annual Chicken Cooking Contest Winning Recipes of 1982, has some great recipes - hey, these were the winners!

Grandpa's Roasted Chicken

  • 1 whole broiler-fryer chicken
  • 2 cups cooked rice
  • 1 cup diced celery
  • 1/2 cup diced onion
  • 2 tablespoons melted margarine (I used butter)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon thyme
  • 1/4 teaspoon nutmeg
  • 1/3 cup bottled bottled barbecue sauce

The first thing you want to do is rinse out the chicken and prep your stuffing. Preheat your oven to 375°F. I put about 2 cups of water in the bottom of my baking pan so that I would have a nice base to make some gravy for serving. Basically, you are going to take all the ingredients (with the exception of the chicken and the barbecue sauce) and mix together. I found I had more than enough to stuff the bird. I could have even cut the ingredients in half, but hey - you can never have enough stuffing right?

Next I had to stuff the birdie - LOL I don't know why this is my least favorite part, but one of the most delicious when it's all done - LOL

Before putting the bird in the oven, I brushed it all with the barbecue sauce. It didn't use much and during the course of cooking, I brushed the remainder of the 1/3 cup on the chicken - I did this probably about every 10-15 minutes. You are going to want to cook this, uncovered, for about an hour. You will know it's done when the leg moves freely when lifted or twisted.

The best part comes now - Enjoy! I will tell you, I am usually a bread-based stuffing girl but it was nice to have the rice stuffing for a change. It has a great taste and I totally enjoyed dinner. I know Amy did too :) It's nice to see the food get inhaled - LOL Tonight we are going to have leftovers but I will try to get another recipe post to you soon.
