Cinnamon Sugar Applesauce Muffins

The Taylor House has some great recipes. My girls always loved applesauce but there is always leftovers and I hate wasting anything so I went looking for some yummy applesauce muffins and these are the ones I have settled on for now. I am sure I will be adding more from this site over time. To get the full recipe and all her instructions, please click here or on the picture above. Ingredients

1/2 cup butter, softened
1/2 cup sugar
2 eggs
3/4 cup applesauce
1-3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla
1/2 teaspoon cinnamon

Topping:
1/2 cup melted butter
1/2 cup sugar
1 tablespoon cinnamon

Preparation
  1. Preheat oven to 350 degrees F.
  2. Cream together butter and sugar until smooth.
  3. Add eggs, applesauce and vanilla and combine well.
  4. Mix flour, salt, baking soda and cinnamon in a separate bowl and slowly add to dough. Mix well.
  5. Scoop into greased mini muffin tin.
  6. Bake for 15 minutes.
  7. After muffins have cooled, dip into melted butter and then dip into combined sugar and cinnamon to coat well.
