Root Beer Float Cupcakes

24 cupcakes


1 golden yellow cake mix + ingredients according to package directions
2 tablespoons root beer extract, divided
16 ounces heavy cream
1 cup confectioners' sugar

  1. Mix cake mix according to directions, adding 1 tablespoon of root beer extract.
  2. Divide batter into 24 lined cupcake tins.
  3. Bake according to cake mix directions.
  4. Cool completely.
  5. Beat heavy cream until it begins to thicken.
  6. Add remaining root beer extract and confectioners' sugar.
  7. Beat until thick and it's frosting consistency.
  8. Frost and store in refrigerator.
