If you love snickerdoodles and want to change it up a little bit, you have to try these snickerdoodle blondie cups. The recipe that follows will make about 2 dozen. They will go fast! They are similar to brownies, but without the chocolate.
- 2-2/3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 cups brown sugar
- 1 cup butter (at room temperature)
- 2 eggs (at room temperature)
- 1 tablespoon vanilla
- For topping:
- 4 tablespoons sugar
- 4 teaspoons cinnamon
Preheat your oven to 350 degrees F.
You will want to combine all the ingredients (except the flour) and mix well. Gradually add in the flour. You want to grease some muffin tins well or spray some of the silicone baking cups, like the ones that I use.
Fill the cups about 1/2-3/4 of the way full and then sprinkle with the topping. You will want to bake these cups about 20 minutes, perhaps a little less. You want them a little undone to remain the moisture, but not too early. Think of this part as you would baking brownies.
If you want to just make a pan, you can grease a 9x13 baking pan and fill and then sprinkle the topping over that. For this, you will want to bake about 25-30 minutes.
If you want to make mini muffins, do the same, but watch the baking time. They should be done in about 10 minutes, give or take a minute.
